The last full month of summer is here, and as we prepare our families for returning from our vacations and back to school or the office, we want to find ways to savor these last bits of the season. So, that is why we're sharing one of our favorite breakfast recipes to bring to your dining table, brown butter waffles with maple cream and a citrus fruit salad. Whether still on your summer holidays or are home and want to dine outside, treat the kids and yourself with this sweet, citrusy combination. The nutty and aromatic brown butter will give an extra dimension to your waffles and the flavored maple whipped cream is incredibly rich and fun to dollop on top. Recipe
6 tablespoons unsalted butter
2 cups all-purpose flour
1 tablespoon brown sugar
1 teaspoon salt
1/2 teaspoon baking soda
1 cup yogurt
1 cup milk (substitute in almond if you'd like)
4 large eggs
1 orange
1 teaspoon vanilla extract
Instructions
Heat up your waffle iron. Start by browning the butter in a saucepan over medium heat. Leave the butter alone, taking it past melted and to a golden brown stage. You'll know it's done when it's a golden brown color and there are little flecks of black (those are the milk solids from the butter that have been caramelized). Pour into a heatproof bowl and let cool. Stir the flour, sugar, salt, and baking soda in a medium-sized bowl. Separately in a large bowl, whisk together the yogurt and milk. Then whisk in the eggs, one at a time. Zest the skin of the orange and squeeze in the juice of half of the orange (about 2 tablespoons). Add the vanilla extract. Mix in the browned butter. Add the dry ingredients to the wet batter in three batches—folding the mixture until incorporated. Spray your waffle iron with non-stick spray. Add the batter to your iron (the amount will change depending on the size of your iron, do a test waffle to see what's best.) Be sure to spray your waffle iron with non-stick spray before each waffle.

1 quart heavy cream
1 tablespoon pure maple syrup
1 teaspoon vanilla extract
Sprinkle of salt suggested, salt to taste
Instructions
Add the heavy cream to a large, heavy bowl. Whisk vigorously until the cream forms soft peaks and will be able to dollop. Add pure maple syrup, vanilla extract, and a pinch of salt. Taste and add more syrup if needed.

This salad is so easy it doesn't need a recipe. We started by slicing up an assortment of citrus (blood oranges, naval oranges, and grapefruit are all great). Then squeeze some lime juice over the top, sprinkle with fresh mint (any soft herbs would also work), and top with pomegranate seeds. That's it to make the perfect side to your breakfast waffles!
